Best Local Food in Wuhan: How to Guozao Like a Local
Fifteen dishes, what they cost, how to order them in Chinese, and the unwritten rules of Wuhan's two-hour breakfast.
Guozao is not breakfast
Wuhan people say 过早 (guò zǎo, 'pass the morning'). It is a street ritual from about 6:30 to 9:30: dozens of dishes, plastic stools, QR codes, and nobody sitting for long. A proper guozao is two items — one dry (noodles, doupi, a mianwo ring) and one wet (egg rice wine, soy milk, fish soup). Locals claim you can eat a different breakfast every day for a month without repeating.
The five you must try
- Hot dry noodles (热干面) — sesame paste, pickled radish, chili oil, no soup. ¥6–9. Say 少辣 (shǎo là) for less chili.
- Three-fresh doupi (三鲜豆皮) — egg-and-mung-bean crêpe over glutinous rice, pork and mushrooms, fried on an iron plate. ¥8–15.
- Mianwo (面窝) — a savoury rice-flour ring, crisp edge and thin middle. ¥2. Dunk it in your noodle sauce.
- Fish paste soup noodles (糊汤粉) — peppery, thick, made from tiny wild fish; tear a fried dough stick into it. ¥8–12.
- Egg rice wine (蛋酒) — sweet fermented rice wine poured over a whisked egg, served hot. ¥3–5. Wuhan's morning latte.
Lunch and dinner
Lotus root and pork rib soup (排骨藕汤) is the dish every family cooks for guests; Hubei grows China's best starchy lotus root. Steamed Wuchang fish (清蒸武昌鱼) is the bream Mao wrote a poem about. Spicy duck necks (鸭脖) from Zhou Hei Ya are the snack for the train. From May to August, the entire city eats braised crayfish (油焖大虾) by the kilo on Wanshong Road, gloves on. In winter, ask for 洪山菜薹 — purple stem stir-fried with cured pork, grown only around one temple in Wuchang.
How to order
Address any stall owner as 老板 (lǎo bǎn, 'boss'), regardless of gender. Point and say 来一份 (lái yí fèn, 'one portion'). Chili and vinegar are self-service. Pay by scanning the stall's Alipay QR; if your card fails, say 刷不了 and offer cash — vendors must accept it. GoHubei's show cards (no spicy, vegetarian, halal, peanut allergy) are written in polite Chinese; hand over your phone.
Where
Follow the longest queue on any street before 9am. Cailinji (蔡林记) is the historic hot-dry-noodle chain; Lao Tongcheng (老通城) for doupi; Xu Sao (徐嫂糊汤粉) in old Hankou for fish soup noodles. Or book a local student for a guozao crawl on Liangdao Street — thirty stalls in five hundred metres.
