The story
Started as a Jingwu Road (精武路) street snack in the 1990s and became a national industry — Zhou Hei Ya (周黑鸭) and Jue Wei both trace back to Wuhan. Locals buy a bag for the high-speed train.
How to eat it
Gnaw, don't bite: the meat is between the vertebrae. Have tissues and a drink ready. 微辣 (mild) is still hot.

周黑鸭 or 精武鸭脖 counters at every metro exit and station.
