The story
'才饮长沙水，又食武昌鱼' — Mao's 1956 poem made this fish nationally famous. The real thing (团头鲂) comes from Liangzi Lake in Ezhou, once the site of ancient Wuchang.
How to eat it
Ask for 清蒸 (steamed) for the classic version. Watch for fine bones. Turn the fish over with chopsticks, never flip it — old river superstition.
Where
Hubei restaurants in Wuchang; 湖锦 and 小蓝鲸 chains do reliable versions.
