The story

High-altitude Enshi potatoes are tiny and sweet, and 炕 (kàng) means slow-searing on a dry pan — a Tujia technique. Locals eat them on a stick like ice cream.

How to eat it

Order 一份, eat with the bamboo skewer. Ask 不要辣 for no chili.
